bruschetta.. grilled bread with toppings

well, this is bruschetta. we love it just with the fresh tomatoes and basil pesto topping. this is what we do when we have an abundance of tomatoes in our small garden. it is a refreshing thing to eat. all the vitamins and the healthy goodness that comes from eating raw veges.

our sweet basil ... i transferred them from the back to the front yard and they grew so big :) i was so happy that i did that. i think they did not get enough sunlight at the back lah..but the parsley and the rosemary did very well though.

the pesto is easy to make. all of the recipes will call for pine nuts, but i omit them. just because i am lazy to put it in..hahahaha. and also some would add parsley to it..which i also omit because i like the flavour of basil better. so there you go..take a couple cloves of garlic and a bunch of basil leaves, add salt and pepper and about a quarter cup of olive oil and process the thing :) and there you have it..pesto sauce :)

our sweet 100 cherry tomatoes. this variety is so ver sweet. it's like eating grapes. i love it and and the slightly bigger ones are the roma or plum tomatoes. i am surprised that they are bearing fruits , just because it took me forever to transplant them onto the raised bed. :) but alhamdullilah...hidop jugak pokok tomato i seme :)

the basil, garlic and olive oil being blended. takder ni takper..pakai jer the normal blender :) it works too.

the pesto sauce and the halved cherry tomatoes.

right at the end..mix the tomatoes with the pesto and add a bit of grated parmesan cheese into the mixtues. and put it on top of the grilled bread. sprinkle with more parmesan cheese if you like. now this dish is not cheesy at all..you will get more taste of the basil and tomatoes :)

I LOVVVVVEEEEEE bruschetta!!! :D Boleh addicted makan benda nie. I guess they have many versions. I make mine by marinating the chopped tomatoes in balsamic vinegar and olive oil, lepas tu the bread spread with mayo+parmesan cheese mix, grilled, top with tomato mix, grill lagi. Sedaaaap!! Belum try buat pesto - looks very tempting but pine nuts is quite expensive lah sini, or maybe I'm looking at the wrong places... tapi memang nak try :D

Your tanah so subur one!! The tomatoes look really good babe! :D Untung you, kita kat sini cactus piara pun boleh mati :D
